Sourcing & Roasting

Crafting Coffee with Passion and Purpose

Our approach to coffee roasting is rooted in sourcing exceptional beans with attention to quality, sustainability, and cultivating meaningful relationships with farmers. Each coffee we choose tells a story, and we honor it through precise roasting techniques that reveal the coffee’s inherent flavors. By following harvest cycles and selecting seasonal coffees, we ensure that every cup reflects the freshest, most vibrant flavors available.

Exceptional Sourcing

Crafting Relationships for Exceptional Coffee

Our philosophy on coffee begins with sourcing outstanding beans. This means going beyond simply purchasing; we research each coffee’s origin, the farmers behind it, their cultivation methods, processing, and storage. Sustainability is essential to us, extending past Organic and Fair Trade certifications. We build lasting partnerships with producers who share our passion and commitment to quality, often visiting them in person to foster these relationships. Each trip honors the farmers’ dedication and reinforces our shared mission of delivering the finest coffee to our customers.

Flavor Exploration

The Art and Science of Flavor

With over 850 flavor compounds, coffee is a complex and ever-evolving experience, and that’s what makes it so exciting. We meticulously "cup" (taste) countless samples to analyze aromas and flavors before committing to a single bag. Once chosen, each coffee undergoes multiple test roasts and cuppings to perfect its flavor, finding the ideal balance of sweetness, acidity, body, and aftertaste.

Unique Roast Profiles

Highlighting Each Bean’s Unique Profile

From variety and elevation to soil conditions and processing, countless variables shape the character of each bean. Our goal in roasting is to bring out each coffee’s inherent qualities without masking its natural flavors. Through custom roast profiling—developing unique roast "recipes"—we carefully analyze each coffee, crafting profiles that amplify its true flavor dynamics and natural sweetness.

Seasonal Freshness

A Commitment to Fresh, Seasonal Coffee

Coffee is constantly evolving, with flavor nuances that change over time. Beans harvested a few months ago will taste more vibrant than older stocks, so we prioritize coffees in season. This attention to global harvest cycles means that certain selections may not be available year-round, ensuring that each cup represents coffee at its peak.
