At Evans Brothers Coffee, community has always been the heart behind what we do. It lives in the small, everyday moments. Morning regulars, familiar conversations, and the places that people return to not just for what they offer, but for how they make them feel.
In Sandpoint, Marigold Bistro is one of those places. It is the kind of space where you can settle in with a cup of coffee, meet a friend for lunch, or gather with a group and lose track of time in the best way. With a strong foundation in hospitality and a clear love for bringing people together, Marigold Bistro has created something that feels both welcoming and deeply rooted in community.
Who Marigold Bistro is
Marigold Bistro is rooted in experience, resilience, and a genuine love for the restaurant world. For owner Cassandra, that journey has been years in the making, with a long history in the Sandpoint area, including previously owning Forty-One South and Shoga Sushi in Sagle for over a decade.
“I’ve been in the restaurant industry for pretty much my entire career,” she shares. After the unexpected closure of those restaurants in 2021, stepping away from the industry felt like the natural next chapter. “At first I didn’t think I’d ever jump back into another restaurant,” she says, but over time, something was missing. The rhythm of the restaurant, the connection with guests, and the joy of creating a space for people to gather slowly called her back.
Marigold Bistro grew out of that return, along with a new vision. “I really missed it and eventually found an opportunity to open Marigold,” Cassandra explains. With a focus on both daily service and expanded catering, the space was designed to offer flexibility. “We are open Monday through Friday for breakfast and lunch, which gives us the flexibility to do catering and events either here or off-site on evenings and weekends.”
Why we love working with Marigold Bistro
Working with Marigold Bistro feels like a natural fit. There is a shared care in the way Cassandra approaches her space, with a focus on quality, consistency, and creating an experience that feels genuinely welcoming.
Her connection with Evans Brothers goes back years. “I worked with Evans Brothers at my previous restaurant as well, so I have a long history with them,” she shares. When she stepped into the Marigold space, continuing that relationship felt like an easy choice. “I was very happy to continue featuring their products at our coffee bar.”
That alignment shows up in the details. “I appreciate that Evans Brothers coffee is high quality, flavorful, and consistent,” Cassandra says, values that mirror what they strive to offer in their food and service at Marigold.
There is also room for creativity and fun along the way. “It’s always fun to play with special latte flavors and create something fun and beautiful for our guests.”
The coffee moment at Marigold Bistro
At Marigold Bistro, coffee has become part of the daily rhythm in a way that feels both simple and special.
For Cassandra, it was not always that way. “I actually didn’t really drink coffee much before,” she shares. But with an espresso machine now part of the space, it has naturally found its place in her routine. “Now it’s pretty much become a daily habit.”
Her go-to is just as comforting as the space itself. “I usually make a latte with a little brown sugar and cinnamon,” she says. It is warm, familiar, and easy to come back to day after day.
Like so much at Marigold, coffee is not about overcomplicating things. It is about creating small, consistent moments that people can look forward to, whether it is part of a morning routine or a quiet pause in the middle of the day.
Rooted in community
Community is at the center of everything Marigold Bistro does. For Cassandra, supporting local businesses is not something that feels forced. It is simply a natural part of being in a place like Sandpoint.
“It’s easy to support local when we have so many amazing businesses here,” she shares. Whether it is featuring local products, partnering on events, or simply showing up for other businesses around town, that support is woven into the day-to-day.
At its heart, Marigold is about connection. “Community means creating a place where people feel welcome, celebrated, and connected,” Cassandra says. That intention shows up in every corner of the space, from casual lunches to larger gatherings and events.
It is more than just a place to eat. It is a place where people can come together, build relationships, and feel like they belong. As Cassandra puts it, “it’s our inspiration, our motivation, and our livelihood,” something they are deeply grateful for.
