ABOUT THE PRODUCER..

Everyone knows Colombian coffee—or thinks they do. However, to simply say a coffee is from Colombia is to tell just a fragment of the story. Colombia’s 20 coffee-growing departments express many different profiles in the cup, and even within growing regions there are plentiful variations due to mountainous terrain, wind patterns, proximity to the Equator, and differences in varieties and processing techniques.This delicously sweet, full-bodied Colombian coffee is produced by FUDAM, a 300 member association of organic and Rainforest Alliance certified growers in the Nariño region. The farmers typically ferment the lots for 16–24 hours dry and then wash the coffee two or three times before drying it in small "casa elbas," mechanical dryers, or parabolic dryers. The mechanical drying takes between 25–40 hours, while the other drying structures can take up to 15 days.
